This is definitely a departure for me since it has nothing to do with fashion or beauty. Till now, I haven’t revealed one of my other great passions in life: FOOD! But, sometimes, my love for great meals gets me in trouble when the scale tips 5 to 10 pounds over my regular weight. I’ve been eating healthy these past couples of months and one of my favorite skinny dishes to make is baked salmon with sweet potatoes and salad. I posted a picture of this on FB the other night and many people asked for the recipe. So here it is:
I cooked this meal for two people. Be sure to increase the ingredients if you’re cooking for more people.
Baked Salmon with Mustard-Dill Sauce: 2 salmon fillets, 1/3 cup of chopped fresh dill, 2 teaspoons of chopped garlic, 3/4 cup of greek Yogurt, 1 tablespoon of Dijon mustard, 3 tablespoons of chopped onion, Salt & Pepper
Whisk greek yogurt, dill, onion and mustard in a small bowl to blend. Season with salt & pepper. Let it sit in room temperature for an hour.
Preheat oven to 400F. Lightly oil baking sheet and salmon. Sprinkle with chopped garlic, salt & pepper; spread with 1/3 cup of the sauce. Bake salmon until just opaque in center, about 20 minutes. Serve with remaining sauce (optional).
Sweet Potatoes: sweet potatoes, shaved parmesan cheese, butter, salt & pepper
Wrap sweet potato with paper towel and put it in the microwave. Use the microwave button BAKED POTATOES to cook. It will automatically shut off when its ready. Remove the skin and mash in a bowl. Add a dollop of butter, salt & pepper to taste, sprinkle a tad of cinnamon and add shaved parmesan.
Salad: Butter Lettuce, Haas Avocado, Red Wine Vinegar, Olive Oil, Salt & Pepper
Chop butter lettuce, slice avocados and toss with red wine vinegar, olive oil, salt & pepper to taste.
